1 square piece of focaccia
1 boiled egg
1 tablespoon mayonnaise
1 tablespoon hummus
½ tomato
1 pan-fried chicken breast
1 gherkin (sweet and sour)
a few red onion rings
handful of romaine lettuce
1 to 2 tablespoons of Parmesan shavings

Make it veggie!

1 square piece of focaccia
1 boiled egg
1 tablespoon mayonnaise
1 tablespoon hummus

grilled halloumi or tofu (instead of chicken)
1 gherkin (sweet and sour)
a few red onion rings
handful of romaine lettuce
1 to 2 tablespoons Parmesan shavings

Preparation method

How do you make this?

Slice the focaccia in half horizontally.

Toast both halves golden brown in the toaster or pan.

Spread the bottom half with hummus.

Spread the top half with mayonnaise.

Slice the chicken breast and place on the bottom half.

Slice the tomato and distribute over the chicken.

Peel the egg, slice it, and place on top.

Add the Romaine lettuce for extra crunch.

Finish with red onion and pickle slices.

Sprinkle with Parmesan shavings.

Close the sandwich and press lightly.

Tips

  • Add some mustard to your mayonnaise for extra zing.
  • Make it spicier with chili flakes or sriracha.
  • No toaster? Grill the focaccia in a pan with a little olive oil.
  • Perfect for using up leftover chicken.
  • Storage
    Fridge: max. 1 day (best stored without sauce for crispiness)
  • Reheating: only reheat the focaccia and chicken separately, then assemble fresh
