Divide some green salad on the plates, add some lamb's lettuce, beans, and onion, and a dollop of mayonnaise. Put the rest of the salad in a bowl and place it on the table.
Cut the lemons in half and place them on the plate.
If necessary, trim the soles with scissors, cutting from the bottom of the tail upwards in the opposite direction, pat them very dry and season with pepper and salt.
Let a large lump of butter melt in a non-stick pan and fry the soles in it until golden brown on both sides.
Finish frying the fries, place them on paper towels and set them on the table.
Divide the fish on the plates and serve immediately.
