600g stew meat, not too lean, at room temperature
1 large onion
2 tablespoons olive oil
4 cloves garlic
1 tablespoon Gochujang
1 bottle of dark beer
500ml brown veal stock
70g tomato paste
3-4 speculoos cookies
1 tablespoon balsamic vinegar
125g chorizo sausage, diced
Pepper and salt
Jar of pickled jalapeños
1 bunch of coriander
1 red onion
1 lime
Freshly baked fries
200g grated cheddar cheese
Fresh mayonnaise

2 tablespoons olive oil

1 tablespoon Gochujang

500ml brown veal stock
70g tomato paste
3-4 speculoos cookies
1 tablespoon balsamic vinegar
125g chorizo sausage, diced

1 bunch of coriander
1 red onion
1 lime
Freshly baked fries
200g grated cheddar cheese
Fresh mayonnaise

Preparation method

How do you make this?

Cut the meat into cubes of about 2 cm. Heat a cast-iron pot with the olive oil. Season the meat with pepper and salt and brown it in two batches.

Remove the meat from the pot and sauté the chopped onion, garlic, and chorizo until nicely colored.

Add the tomato paste, gochujang, and balsamic vinegar and sauté for a minute.

Deglaze with the Leffe and veal stock, add the speculoos cookies, and let simmer gently for 45 minutes. Stir occasionally.

Meanwhile, slice the red onion thinly, grate the lime zest over it, and squeeze the juice on top. Set aside.

Roughly chop the coriander.

Fry the fries as soon as the stew is tender and distribute them over a large ovenproof dish. Add the stew and cheese and place in a preheated oven at 200°C for 5 minutes.

Finish with the jalapeños, coriander, and marinated onion. Serve immediately and yes, a bit of fresh mayonnaise is also welcome 😊
