Cut the watermelon into nice rectangular sticks, approximately 10 cm long, 1.5 cm wide, and 1 cm thick.
Make sure you have as many watermelon sticks as anchovy fillets.
Cut the feta into slices that fit nicely on the watermelon.
Place a slice of feta on each piece of watermelon.
Place an anchovy fillet on top.
Finely chop the mint leaves or tear them into thin strips.
Finish each bite with some mint.
Arrange the appetizers on a nice cake stand or serving dish.
Serve immediately so the watermelon stays wonderfully fresh.
Tips
- Choose a ripe and sweet watermelon for the best contrast with the anchovies.
- Cantabrian anchovies have a soft texture and a refined flavor that works perfectly in this recipe.
- Serve the watermelon well chilled.
- Also delicious as part of a summer tapas platter.
- Optionally, finish with a few drops of the anchovy oil for extra flavor.
- Store covered in the refrigerator for a maximum of 1 day. They are best when freshly made.
