Preparation method for fries
- Preheat the oven to 230 °C.
- Cut the potatoes into fries about 1 centimeter wide. Wash them and dry them well.
- Mix the oil, the crushed garlic, pepper, and salt in a large bowl.
- Fold in the fries.
- Arrange them side by side on a baking sheet lined with parchment paper. The fries should not touch each other.
- Bake for 25 to 30 minutes until they are nicely browned and crispy.
Preparation method for cheese sauce
- Warm the sour cream together with the Chester cheese.
- Add pepper and salt to taste.
- Blend smoothly with an immersion blender and pour into a piping bag.
Preparation method for turkey mince
- Sauté the chopped onion until translucent and add the turkey or veal mince.
- Mash the mince with a fork until it is crumbly (and keep repeating this).
- Add the spices.
Preparation method for roasted cranberries
- The oven can stay at 230 °C.
- Mix the cranberries with the sugar and cinnamon.
- Place them on a baking sheet lined with parchment paper and bake for 3 to 4 minutes in the oven at 230 °C until they pop.
Finishing touches
- Distribute the oven-baked fries on a platter.
- Sprinkle the cooked turkey mince over them.
- Grate Parmesan cheese over it.
- Drizzle the cheese sauce in lines over it.
- Top with the roasted cranberries, parsley, and finely chopped spring onions.
Tips
If you like it "hot": serve with (galapagos) jalapeño peppers on juice. For vegetarians: replace the turkey minced meat with Quorn or Tofu.
