TRAMEZZINI
1 firm white toast bread

CHICKEN CURRY SALAD
800 g boneless chicken thigh meat
pepper and salt
thyme
Bay leaf
1 tablespoon curry powder
1 teaspoon paprika powder
50 ml broth
2 tablespoons fresh mayonnaise
1 red onion, finely chopped
0.5 bunch of parsley
slices of sweet-sour pickle

EGG SALAD
8 hard-boiled free-range eggs
4 tablespoons mayonnaise
1 teaspoon mustard
0.5 bunch of chives, finely chopped
pepper and salt
100 g lamb's lettuce, washed and coarsely chopped

Preparation method

How do you make this?

Place the meat just under water in a pot with the herbs and let it simmer for 15-20 minutes. Let cool.

Finely chop the meat and mix with all the ingredients for the curry salad. Taste.

Mash the eggs and mix with all the ingredients for the egg salad.

Cut the crusts off the toast and generously spread with the salads. Finish the chicken curry salad with a slice of pickle.

Tips

I also make curry salad anyway when I have leftovers of baked chicken, roasts, ham or ballekes. Nothing is lost here.
