Ingredients

What do you need?
Quantity: 4P

Strawberry mix
250 g strawberries
1 orange (zest)
1 sprig lemon thyme
2 black peppercorns
1 tablespoon olive oil
1 tablespoon honey

Chocolate mousse
250 g dark chocolate (at least 80%)
3 eggs
3 tablespoons brown sugar
300 ml cream
pinch of cayenne pepper
pinch of salt


250 g strawberries
1 orange (zest)
1 sprig lemon thyme
2 black peppercorns
1 tablespoon olive oil
1 tablespoon honey


250 g dark chocolate (at least 80%)
3 eggs
3 tablespoons brown sugar
300 ml cream
pinch of cayenne pepper
pinch of salt

Preparation method

How do you make this?

Break the chocolate into pieces and melt the chocolate in a water bath.

Separate the eggs. Whisk the egg yolks until frothy with the brown sugar.

Whip the cream until semi-stiff and place it in the refrigerator.

Pour the melted chocolate into another bowl so it can cool and not curdle.

Whip the egg whites stiff with a pinch of salt.

Fold the chocolate into the cream. Add a pinch of cayenne pepper.

Fold the egg yolks into the chocolate mixture.

Finally, fold the egg whites into the chocolate mixture.

Divide the chocolate mousse into bowls and let it set in the refrigerator.

Cut the strawberries into pieces. Grate the peel of the orange.

Finely chop the leaves from the sprig of lemon thyme. Crush the pepper.

Heat the olive oil in a pan and add the lemon thyme, grated orange peel, black pepper, and honey.

Add the strawberries and sauté briefly in the pan.

Remove the chocolate mousse from the refrigerator and finish with the strawberries and possibly whipped cream.
