Frosting:
500g mascarpone
250 ml heavy cream
1 tbsp coconut blossom sugar
1 vanilla pod

Biscuit:
300 g self-raising flour
250 coconut blossom sugar
7 large eggs

200 g blueberries (frozen)
1 tbsp honey
Juice of 0.5 lemon
1 tbsp chia seeds

Frosting:

Preparation method

How do you make this?

Biscuit: Preheat the oven to 180°C. Grease a springform pan. Beat the eggs and sugar on high speed for 10 minutes until fluffy, then gently fold in the sifted flour evenly. Pour the batter into the baking pan, smooth it out, and bake for 45 minutes at 170°C.

To ensure that the batter is baked enough, poke it with a skewer. If the skewer comes out dry, the biscuit is done. Let it cool for 5 minutes in the pan, then turn it out onto a rack. Let it cool completely.

Frosting: Whip the heavy cream until almost stiff. Beat the mascarpone with the vanilla and the cane sugar, then gently fold in the whipped cream. Keep cool.

Mix the honey, the berries, and the lemon juice into a thick coulis.

Cut the biscuit into 4 to 5 slices. Place one slice of biscuit in a cake pan and spread a layer of coulis on it, leaving 2 cm from the edge. Spread or pipe the cream on top and continue layering: biscuit, coulis, and whipped cream. You don't need to add coulis on the top biscuit layer.

Finish the sides and top with the cream and smooth it out nicely. Decorate with fun accessories, possibly a bit of Smarties and sprinkles in the color of his/her favorite hero!!
