Honestly, do you sometimes crave a really good meal that practically cooks itself? I got you! This cod stew is pure sunshine in a pan. We use those delicious, sweet Honey Tomatoes that burst open into a wonderful sauce, combined with fresh green beans and a crazy amount of basil. Ingredients

What do you need?

500 g Honey plum tomatoes
300 g green beans, halved and cooked al dente
1 sweet onion
1 large bunch of basil
700-800 g cod fillet
2 tbsp olive oil
1 tsp garlic powder
Salt and pepper
250 ml water

Preparation method

How do you make this?

Peel the onion and slice it finely, sauté in olive oil with garlic powder.

Wash the Honey tomatoes and cut them in half, add to the onion with a splash of water, season with pepper and salt.

Let simmer for another 4-5 minutes under a lid.

Pluck the basil leaves from the stems.

Portion the cod into pieces of about 5 cm and season with pepper and salt.

Then add the cod and green beans, and top with the basil leaves.

Let simmer for another 4 minutes under the lid.

Finish with extra fresh basil.

Serve as is or with rice, noodles, or steamed potatoes.

Tips

  • Do you like herbs such as turmeric, ginger and coriander seeds, feel free to add a teaspoon of each at the start of the preparation, at the onion.
  • Replacing water with coconut cream gives it a Thai curry key.
