Peel the onion and slice it finely, sauté in olive oil with garlic powder.
Wash the Honey tomatoes and cut them in half, add to the onion with a splash of water, season with pepper and salt.
Let simmer for another 4-5 minutes under a lid.
Pluck the basil leaves from the stems.
Portion the cod into pieces of about 5 cm and season with pepper and salt.
Then add the cod and green beans, and top with the basil leaves.
Let simmer for another 4 minutes under the lid.
Finish with extra fresh basil.
Serve as is or with rice, noodles, or steamed potatoes.
Tips
- Do you like herbs such as turmeric, ginger and coriander seeds, feel free to add a teaspoon of each at the start of the preparation, at the onion.
- Replacing water with coconut cream gives it a Thai curry key.
