4 salmon fillets of about 180g per person
1 kg large green asparagus
400 g baby potatoes

Chive-mustard dressing:
2 tbsp mustard
1 tbsp honey
4 tbsp canola oil
juice and zest of 1 lemon
pepper and salt
1 bunch of chives, finely chopped

Preparation method

How do you make this?

Season the salmon fillets with salt and pepper and place them in an oven dish.

Cut 1 cm off the ends of the asparagus (green asparagus does not need to be peeled). Pull off the tough triangular leaves.

Place them next to the salmon fillets.

Cut the washed potatoes in half and add them.

Steam for 15 minutes.

Meanwhile, mix everything for the dressing.

Divide over the plates and serve with the fresh vinaigrette.

Tips

It is important that the 4 pieces of salmon have about the same thickness, so that they have the same cooking time. This also applies to the potatoes. If they fall out a bit big, safely cut them into 4. So everything is nicely cooked in 15 minutes. If you want a low -carbohydrate dish, replace the potatoes with an extra vegetable, for example all types of beans or broccoli.
