200 gr. whole spelt flour
50 gr. almond flour
4 large eggs
200 gr. pitted dates, soaked in water for 30 min (medjool)
50 ml agave syrup
250 ml extra virgin olive oil
1 vanilla pod

Seasonal fruit
strawberries, blueberries, red currants, blackberries, raspberries

Coulis
150 gr. strawberries
100 gr. red currants
2 tbsp mascarpone

Garnish
a few sprigs of mint

Cake
200 gr. whole spelt flour
50 gr. almond flour

200 gr. pitted dates, soaked in water for 30 min (medjool)
50 ml agave syrup
250 ml extra virgin olive oil
1 vanilla pod

150 gr. strawberries
100 gr. red currants
2 tbsp mascarpone

Garnish
a few sprigs of mint

Preparation method

How do you make this?

Cake: Mix the eggs, dates, agave, and vanilla seeds together until smooth.

Put the whole grain flour and almond flour in a mixing bowl.

Add salt and olive oil.

Mix the egg mixture into this.

Pour into a rectangular cake tin (30 x 12) lined with baking paper.

Bake for 40 min at 160°C. Stick a toothpick in the cake; if the batter does not stick to the toothpick, it is done.

Let cool.

Cut into squares.

Wash all the fruit and alternately thread fruit and cake onto the skewers.

Coulis: Blend the strawberries, stripped red currants, and mascarpone with an immersion blender.
