Ingredients

What do you need?

8 small piccolos
8 thick slices of fresh salted bacon
8 thick slices of fresh smoked bacon
3 tbsp Sweet & Spicy soy sauce
4 tbsp Crispy onion
Burnt salt spicy sauce (Gilles Draps) or Sriracha
8 handfuls of curly parsley
Pepper and salt
8 cheese croquettes
A knob of butter for frying
Cressette

Fresh tartar sauce (see recipe)

8 small piccolos
8 thick slices of fresh salted bacon
8 thick slices of fresh smoked bacon
3 tbsp Sweet & Spicy soy sauce
4 tbsp Crispy onion
Burnt salt spicy sauce (Gilles Draps) or Sriracha
8 handfuls of curly parsley
Pepper and salt
8 cheese croquettes
A knob of butter for frying

Preparation method

How do you make this?

Season the bacon with some pepper and salt.

Put some butter in the pan and fry the bacon until crispy and golden brown.

Remove the bacon from the pan and cut into pieces.

Add the sweet & spicy soy sauce to the pan, let it reduce slightly and then add the cut bacon back in, fry briefly in the soy sauce until nicely glazed.

Heat the deep fryer to 175°C and fry the cheese croquettes for 4 minutes until golden brown.

Then fry the parsley, season it with some salt.

Cut the piccolos in half.

Top with fresh tartar sauce, pieces of bacon, watercress, and a cheese croquette.

Finish off with some burnt salt sauce or sriracha, fried parsley, and crispy onion.
