Roll out your pizza dough on a table with some semolina, making sure to include the edges.
Mix the ricotta with a little water and spread this over one half of the dough.
Cut the salami into small pieces and distribute over the ricotta.
Add black pepper, Pecorino, and half of the mozzarella.
Fold the calzone closed and press the edges well.
Make two small holes at the top.
Spread the tomato sauce over it.
Add basil, mozzarella, and olive oil.
