This is truly one of those classics that always scores big at my home. A juicy meatloaf with sweet apple pieces, savory tripe, and crispy bacon around it... pure coziness on the table. Comfort food that makes everyone happy, and it also smells delicious while it's in the oven!

What do you need?

800g seasoned ground pork
1 white pudding
1 onion
1 egg
4 tbsp breadcrumbs
1 large Jonagold apple, washed
12 slices of fresh bacon
Salt and pepper

800g seasoned ground pork
1 white pudding
1 onion
1 egg
4 tbsp breadcrumbs
1 large Jonagold apple, washed
12 slices of fresh bacon
Salt and pepper

Preparation method

How do you make this?

Put the minced meat in a bowl with pepper and salt, finely chopped onion, breadcrumbs, and the egg, and mix everything well together. Remove the core from the apple and cut it into cubes, mix it well into the minced meat, and divide everything into 2 portions.

Grease a baking dish and shape the first part into a flat oval shape, the size of the white sausage, cut the skin off the white sausage and place it on top. Place the other portion of minced meat on top and press it down well all around. Lay 4 slices of bacon crosswise over the minced meat and then the other slices around the bottom. Secure with a string.

Bake for 45 minutes in a preheated oven at 185Β°C. Serve with your favorite side dishes: endive salad, potato gratin, applesauce, or mashed potatoes.

Tips

  • You can replace the white pudding with grey or black pudding.
  • You can replace the apple with pear or raisins.
