Quantity:

2 large Boskoop apples, peeled and diced
± 600 g parsnip, peeled and diced
3 shallots, finely chopped
2 cloves of garlic, finely chopped
1 tbsp olive oil
400 ml vegetable broth
5 sage leaves
Salt and black pepper

For the garnish:
A knob of butter
5 sage leaves
1 apple

Preparation method

How do you make this?

Sauté the finely chopped garlic and shallots in oil until they are translucent.

Now add the apples and sage and let them cook until they caramelize a bit.

Add the parsnip and broth and let it cook for 20 minutes covered.

Stir everything well together again or blend if you prefer a smooth puree.

Put butter and sage in a pan and let it foam. Add the apple cubes and distribute over the puree.
