BASE
150 g letter cookies
80 g melted butter
0.5 teaspoon salt

CHOCOLATE-SPECULAAS MOUSSE
200 ml milk
150 g speculaas cookies, broken into pieces
230 g dark chocolate
300 ml cold cream, semi-whipped

TOPPING
extra letter cookies and chocolate
springform pan with a diameter of 18 cm

Preparation method

How do you make this?

Finely chop the letter cookies. Add melted butter and chop again until you have a fine mixture. Pour the base into the springform pan with baking paper in between, press down well, and let set in the refrigerator for at least 1 hour.

Put the milk in a tall measuring cup and add pieces of speculaas. Let sit for 5 minutes and blend smooth with an immersion blender.

Melt the chocolate in a bain-marie or in a large bowl in the microwave. (If using the microwave, stir regularly!) Add the melted chocolate in two batches to the semi-whipped cream and stir well after each addition. When it is almost fully mixed, add the speculaas.

Pour the mixture onto the set letter cookie base and spread evenly. Let set in the refrigerator for at least 3 hours. Cut the sides loose with a fine knife or dip briefly in warm water.

Optionally decorate with letter cookies and pieces of chocolate.

Cut the portions with a warm knife.
