A playful twist on the classic apple strudel! These apple strudel knots are deliciously sweet, crispy, and look festive too. You make them with layers of puff pastry, a creamy layer pastry cream, apple pieces, raisins, and a touch of cinnamon. Ingredients

What do you need?
Quantity: 8-10 pieces

Puff pastry
2 square sheets of puff pastry (20-25 cm) 

Filling
½ recipe pastry cream (cooled) link to recipe on website
4 apples (peeled and cut into small cubes)
1 teaspoon cinnamon
1 handful of raisins 

Finishing
1 egg yolk + dash of milk (dorure)
1 handful of almond shavings
2 tablespoons icing sugar (before and after baking)
Blueberries (optional, for on top)

Make it veggie!

This recipe is already vegetarian. If you'd like to make it completely plant-based, use plant-based puff pastry, pastry cream made with soy milk or almond milk, and brush the knots with a little plant-based milk instead of egg yolk.

Preparation method

How do you make this?

Make the pastry cream and let cool completely. 

Place one sheet of puff pastry on a baking tray lined with baking paper and brush with the pastry cream. 

Peel the apples, remove the core and cut into fine cubes. Divide them evenly over the cream. 

Sprinkle with cinnamon and divide the raisins over it. 

Place the second sheet of puff pastry on top. Cut strips of approximately 2 cm wide with a pizza roller or dough cutter. 

Take one strip at a time and twist it around your fingers into a knot. Place the buttons on a baking tray lined with baking paper. 

Brush the knots with dorure. Sprinkle with almond shavings and a little icing sugar. 

If desired, place a blueberry on each button. 

Bake the apple strudel knots in a preheated oven at 180°C for 20 minutes, until golden brown and crispy. 

Let cool briefly and sprinkle again with icing sugar for a festive finish. 

Tips

  • You can also fill the buttons with some chopped nuts or cranberries for extra bite. 
  • Serve warm with a scoop of vanilla ice cream for dessert. 
  • Use a mix of sweet and slightly sour apples for a fresh taste.
