Make the pastry cream and let cool completely. 
Place one sheet of puff pastry on a baking tray lined with baking paper and brush with the pastry cream. 
Peel the apples, remove the core and cut into fine cubes. Divide them evenly over the cream. 
Sprinkle with cinnamon and divide the raisins over it. 
Place the second sheet of puff pastry on top. Cut strips of approximately 2 cm wide with a pizza roller or dough cutter. 
Take one strip at a time and twist it around your fingers into a knot. Place the buttons on a baking tray lined with baking paper. 
Brush the knots with dorure. Sprinkle with almond shavings and a little icing sugar. 
If desired, place a blueberry on each button. 
Bake the apple strudel knots in a preheated oven at 180°C for 20 minutes, until golden brown and crispy. 
Let cool briefly and sprinkle again with icing sugar for a festive finish.
