Quantity: 8-10 servings

300 ml cream
325 ml milk
1 vanilla pod
115 g sugar
Pinch of salt
3 large eggs
55 g cornstarch
75 g butter

Preparation method

How do you make this?

Mix the sugar, cornstarch, eggs, and vanilla seeds in a bowl and whisk until frothy so everything is nicely combined.

Put the milk, cream, and scraped vanilla pod in a saucepan and bring to a boil.

Once it starts to boil, pour half into the egg mixture. Mix everything well and then combine it back in the saucepan and heat. Keep whisking around until it starts to 'pop'. Remove from heat and whisk in the butter until well combined.

Pour into a dish and cover with plastic wrap to prevent a skin from forming, let cool completely.
