Take a cooking pot and pour the water and sugar into it. Bring the mixture to a boil.
Soak the gelatin sheets in cold water for a few minutes.
Put the egg whites in a grease-free bowl and whip them until stiff.
Cook the sugar mixture until it starts to color slightly and remove the pot from the heat.
Let the soaked gelatin sheets drain for a moment or squeeze them out and add them to the warm sugar mixture. Stir well until the gelatin is completely dissolved.
Gradually add the warm sugar mixture to the egg white foam while whisking.
Continue whisking until the mixture has cooled down.
Fill a piping bag with a large plain nozzle and pipe beautiful mounds of foam onto baking paper.
For half of the marshmallows, let them be piped 'naturally'. For the other half, add a bit of (pink) food coloring powder, let the marshmallows set in the fridge, and then roll them in the coconut flakes. You can also make the coconut pink for the pink marshmallows.
For an extra playful touch, you can alternate the marshmallows with fruit and sew them onto a string. Hang them on a low branch of a tree and let the game begin!
