What do you need?2 packets of quick-cook basmati rice, or regular basmati rice that you soak for 1 hour first
2 bell peppers
4 young carrots
1 pack of sugar snaps
400 ml coconut cream
400 ml water
400 g chicken thigh meat
1 tbsp yellow curry powder
4 cloves of garlic
1 sweet onion
1 tsp turmeric
1 tsp coriander seeds, finely crushed
1 tbsp finely chopped ginger
1 tsp chili powder
To finish with
Chopped spring onion
Mint, roughly chopped flat-leaf parsley
