I adapt the traditional chocolate mousse recipe slightly by using a hint of honey instead of regular sugar. That gives it just that extra deep, mellow flavour. The result? Ingredients

What do you need?
Quantity: 6 servings

300 g cold whipped cream
150 g dark chocolate minimum 70% cocoa
2 tbsp honey
3 large eggs
A pinch of salt

Cocoa powder for finishing

Preparation method

How do you make this?

Melt the chocolate au bain marie, let it cool slightly. The chocolate should definitely not be too warm, but also not too cold.

Whip the cream until soft peaks form.

Whip the yolks until frothy with the honey and stir this into the melted chocolate.

Fold the whipped cream into this mixture in 2 additions.

Whip the egg whites stiff with a pinch of salt and gently fold this in last until a homogeneous mass.

Divide the chocolate mousse into glasses and let it set for at least 1 hour in the refrigerator.

Finish with some cocoa powder.
