Rub a cast-iron pot with a clove of garlic. Place the clove in the pot and add the wine. Heat until just below boiling point.
Cut the rind off the Mont D’or and add it in pieces, along with the other grated cheeses.
Gently heat and keep stirring without letting it boil to prevent curdling.
Place the pot on a trivet or pour it into a special fondue set with a burner. If you don't have that, place it on the fire occasionally and stir well.
Tips
Do not let the cheese fondue cook to maintain a smooth consistency. Experiment with different types of bread, new potatoes or salads such as side dishes.
