This is how you make the one and only béchamel sauce! A delicious basic sauce, or white sauce as it's commonly known. Making a good béchamel sauce is actually fundamental kitchen knowledge, yet I often see people daunted by it. I always season mine with a pinch of nutmeg and sometimes a few drops of lemon juice, which adds that extra touch of zing. Once you've mastered this base, you can use it in many ways: over vegetables, through pasta, or as a base for a lasagne.

Ingredients

What do you need?
Quantity: 4P

700 ml cold milk
30 g butter
40 g flour
Pinch of white pepper
Pinch of salt
Nutmeg

Preparation method

How do you make this?

Let the butter melt and foam well in a high pot.

Add all the flour at once and mix vigorously to ensure the flour and butter are well combined and homogeneous.

Let it cook for another 2 minutes so you don't get a floury taste.

Add half of the cold milk and whisk vigorously to eliminate lumps and stir until you have a smooth thick mass.

Now add the rest of the milk and whisk until you have a thick white sauce.

Season with pepper, salt, and grate some nutmeg in.

You can optionally add a few drops of lemon juice to freshen up the flavor of the sauce.
