Ingredients

8 lamb mignonettes
200g lamb tenderloin
4 lamb ribs
4 merguez sausages
400g lamb mince without spices
2kg vegetables of your choice: young carrots, zucchini, mini cauliflowers, mini romanesco, etc.
50g shelled pistachios
± 2 dl olive oil

Spice mix for the meat:
2 tbsp salt
2 tbsp garlic powder
1 tbsp ground black pepper
1 tsp dried basil
1 tsp dried oregano
1 tsp dried thyme

Taboulé with feta:
1 cucumber
1 lemon
300g pearl couscous
200g feta
4 tbsp olive oil
1 bunch dill
pepper and salt

Tzatziki:
1 cucumber
1 lemon
200g Greek yogurt
1 bunch dill
2 cloves garlic
pepper and salt

Mint sauce:
8 cl sherry vinegar
12 cl olive oil
0.5 bunch parsley
0.5 bunch mint
2 cloves garlic
pepper and salt

8 lamb mignonettes

4 lamb ribs
4 merguez sausages

0.5 bunch parsley
0.5 bunch mint

pepper and salt

Preparation method

How do you make this?

Taboulé: cook the couscous according to the package instructions. Rinse in cold water and let drain well. Cut the cucumber into half slices and the feta into cubes. Add them to the couscous along with the olive oil, sprigs of dill, pepper, salt, and – to taste – lemon juice.

Tzatziki: grate the cucumber with the coarse side of the grater. Sprinkle it with salt and squeeze out as much water as possible. Mix with the yogurt, chopped dill, pressed garlic cloves, and also some lemon juice to taste. Season.

Mint sauce: blend the mint leaves, parsley leaves, oil, vinegar, and pressed garlic cloves finely with a mixer. Season with pepper and salt.

Do you also want to grill mini cauliflowers and/or mini romanesco? First cut them into wedges, cook them for 2 minutes in salted boiling water, and shock them in cold water. Cut the zucchinis into wedges, peel the carrots, and halve them. Lightly coat all the vegetables with oil. Season them with pepper and salt.

Spice mix for the meat: mix all listed ingredients.

Mix the lamb mince with the coarsely chopped pistachios, paprika, cumin, pepper, and salt. Divide the mixture into 8. Make small patties and insert 2 small wooden skewers into each patty. Brush the patties and the merguez sausages with olive oil.

Cut the lamb tenderloins into cubes and thread them onto small satay sticks. Season the lamb tenderloins, the ribs, and the mignonettes with the spice mix.

Grill the meat and vegetables on a large grill, on the barbecue, or under the grill. Serve them with the taboulé, tzatziki, and mint sauce.
