How do you make this?
We bring a browned onion in butter, the peeled stalks of 1kg white asparagus, and 1l chicken broth to a boil. Add some pepper and salt, let it simmer for 10 minutes, and let it cool completely. We blend it with 25cl cream and 250g Greek yogurt and serve the soup in beautiful glasses, finished with slices of asparagus tips and homemade mint pesto.
