Quinoa salad:
150 g cooked quinoa
1 tbsp grated ginger
salt and pepper
1 tbsp olive oil
pepper and sea salt
2 finely chopped spring onions
250 g warm vegetable or chicken broth

400g salmon fillet, pepper, salt

4 vegetable skewers according to the season:
zucchini, asparagus, green beans, broccoli, green bell pepper, romanesco

For the vinaigrette:
1 tbsp finely grated lemongrass
juice of 1 lime
100 ml olive oil
2 tbsp finely chopped chives

Preparation method

How do you make this?

Put the olive oil, ginger, spring onion, and quinoa in the baking element, mix together, and bake for 10 min at 180°C.

Cut all vegetables into equal pieces and thread them onto the skewers, lightly brush with olive oil.

Season the salmon with pepper and salt and place it on the quinoa, arrange the skewers around it.

Bake everything together for 10 min at 190°C.

Meanwhile, mix everything for the vinaigrette.

Plate and serve together.
