Cut the chicken meat in half and pound the fillets flat between two pieces of plastic wrap. Season with pepper and salt. Heat the oil in an ovenproof skillet and brown the fillets well on both sides.
Fry the chili pepper and garlic briefly in the chicken's cooking fat and pour the tomato sauce over it.
Spread the slices of mozzarella over it. Sprinkle with Parmesan cheese.
Set the oven to maximum and on grill mode. Place the pan with chicken in the oven for 10 to 15 minutes. Serve when the cheese has a golden crust.
For Grace, I serve pasta with it. Wim and I prefer extra grilled vegetables or a salad with it.
