What do you need?

Quantity:

500 g baby potatoes
1 egg yolk
2 tsp white wine vinegar
A few good twists of black pepper from the grinder
1 tsp fleur de sel
1 tbsp mustard
1 red onion finely chopped
250 ml peanut oil
2 tbsp finely chopped tarragon (dried can also be used)
1 tbsp capers

Preparation method

How do you make this?

Wash and steam the baby potatoes until cooked and let them cool down.

Put the yolk, mustard, white wine vinegar in a large bowl and mix. Gradually pour in the oil while whisking until you get a thick vinaigrette. Season with pepper and salt, add onion, tarragon, and capers and mix, taste and adjust seasoning if necessary.

Cut the baby potatoes in half if there are a few larger ones, and mix everything together.
