100 ml lemon juice
150 ml limoncello
4 egg yolks
2 tbsp sugar
Zest of 1 lime
250 g mascarpone at room temperature
8 boudoirs
100 g fine sugar
100 g egg whites

Preparation method

How do you make this?

Dip the boudoirs in the mixture of lemon and limoncello and distribute in the glasses.

Divide the rest of the lemon mixture into the glasses.

Beat the egg yolks with the lemon zest and add the sugar.

Whip until thick foam forms.

Whip the mascarpone and mix it into the egg mixture, then distribute in the glasses.

Whip the egg whites with the sugar very stiff for about 8 minutes.

Spread it over the glasses with flair and torch them with a Bunsen burner.

Serve.
