Ingredients

What do you need?
Quantity: 4P

For the burgersΒ 

4 soft hamburger buns
400 g ground beef
400 g ground veal
150 g smoked bacon
1 tsp nutmeg powder
Salt and pepper

ToppingsΒ 

1 large red onion
8 slices of cheddar
Β½ head of iceberg lettuce

Kimchi mayonnaiseΒ 

250 g fresh mayonnaise
1 to 2 tbsp kimchi
Zest of 1 lime

Kimchi mayonnaiseΒ 

250 g fresh mayonnaise
1 to 2 tbsp kimchi
Zest of 1 lime

Preparation method

How do you make this?
  1. Preparation:Chop the bacon finely and mix it with the minced meat, nutmeg, pepper and salt. Divide into 8 equal portions and roll into balls.
  2. Cutting an onion:Slice the red onion into super thin rings using a mandolin.
  3. How to bake smash burgers:Heat a large pan or teppanyaki plate and lightly grease with butter. Make 8 mounds of onion in the pan, place a meatball on top and smash flat with a spatula.
  4. Melting Cheddar:Flip the burgers once they have a crispy crust and immediately place a slice of cheddar on top. Cook until the cheese has melted.
  5. Toasting sandwiches:Cut the hamburger buns in half and heat them in a preheated oven at 190Β°C for 2 minutes.
  6. How to make kimchi mayonnaise:Mix themayonnaiseofkimchiand lime zest.
  7. Assembling burgers:Spread the buns with kimchi mayo, place a lettuce leaf on top, followed by two smash burgers per bun. Add extra sauce and cover with the top bun.
  8. Serve:Serve immediately with extra sauce and fine fries

Tips

Use a sturdy spatula to really flatten the burgers. The thinner, the crispier!

Make the kimchi mayonnaise in advance so that the flavors can infuse better.

Pair with thin, crispy fries for the ultimate burger experience.
