With this basic recipe, you can whip up a generous stack without any hassle. The secret? We make these pancakes with sparkling water, which makes them extra fluffy and tender. Making the batter is incredibly simple; you only need a few basic ingredients that are likely already sitting in your kitchen cupboard.

They are perfect for a cozy brunch, a quick lunch, or just as a snack. Serve them the classic way with sugar, chocolate spread, or jam, or go for my personal favorite: a knob of butter, a sprinkle of sugar, and a fresh squeeze of lemon juice. Success guaranteed!

Ingredients

What do you need?
Quantity: 4P

200 g self-raising flour
350 ml full-fat milk
150 ml sparkling water
Pinch of salt
1 sachet vanilla sugar
2 large eggs
30 g melted butter + extra for frying

Preparation method

How do you make this?

Put the flour, vanilla sugar, and salt in a large bowl.

Pour in a little more than half of the milk with the flour.

Whisk well together so there are no lumps left.

Whisk in the eggs, the rest of the milk, and the butter. If you still have lumps, sieve or mix the batter, then stir in the sparkling water.

Heat a frying pan and add a knob of butter, brush the entire pan with it.

Take a small ladle of batter and pour it into the pan, make a swirling motion with your pan so you have a fully covered bottom of batter.

Make sure it’s not too thick.

Let the pancake color and flip it over, let it cook a bit more.

Place on a plate and cover with another plate to keep them warm.

Grease your pan again each time and cook the batter in the same way.

Serve with sugar, chocolate, or jam.

My favorite is butter, sugar, and fresh lemon juice.
