I make the quick, healthy, and budget-friendly vegetarian spaghetti bolognese. This is one of those dishes that proves you can whip up a big pot of comfort food with just a few simple ingredients and smart choices. Quick, nutritious, and cheap! With berlotti beans as a surprisingly tasty 'mince' alternative and a generous portion of vegetables. Bonus: this veggie bolognese sauce is perfect as a leftover on a croque bolognaise or in a vegetarian lasagna.

Chop the onion and finely crush or chop the garlic. Peel the carrot and cut or grate it coarsely.

Heat the fat in a large pot and sauté the onion and garlic over medium heat until they are nicely colored. Then add the carrot and cook for 2 minutes.

Rinse the berlotti beans well under cold water. Chop them coarsely with a knife or mash them with a fork until you have a coarse, mince-like texture.

Add the beans to the pot and cook them briefly. Season with pepper, salt, a pinch of chili flakes, and some oregano (or other dried herbs from your cupboard).

Pour in the passata, add a knob of sugar to balance the tomato sauce, and stir well. Let it simmer for 10 minutes on low heat, covered.

Meanwhile, cook the pasta according to the instructions on the package in salted water. Drain.

Serve the pasta with a generous spoonful of sauce on top. Extra chili flakes, oregano, and a few drops of oil. Optionally finish with some grated cheese.
