What do you need?

Mascarpone cream 250 g mascarpone
200 g cream
2 tablespoons honey
Zest of 1 lime (optional: a bit of vanilla)

Cherry mixture 500 g cherries
1 tablespoon honey
Juice of 1 lime

Topping 100 g amaretti cookies
1 handful of mint leaves

Preparation method

How do you make this?

Prepare the cherries – Pit the cherries and place them in a bowl. Add the lime juice and honey. Mix well and let sit for a while to allow the flavors to meld.

Make the mascarpone cream – Combine the mascarpone, cream, honey, and zest in a bowl and whip until light and fluffy. (and optionally a bit of vanilla). Chill.

Build the tiramisu – Take four nice glasses. First, distribute the mascarpone cream over the glasses.

Add the fruit layer – Spoon the marinated cherries on top.

Finish off – Coarsely crumble the amaretti cookies and sprinkle over each glass. Finely chop a few mint leaves and sprinkle on top, finishing with a nice mint sprig on top.

Tips

  • You can make this perfectly a few hours in advance and store it in the fridge.
  • Don't have amaretti? Then use speculoos or cantuccini as an alternative.
  • You can also replace the cherries with blueberries, nectarines, or strawberries.
