Ingredients

Rhubarb-raspberry compote
300 g rhubarb, cut into pieces 300 g
raspberries (fresh or frozen)
3 tbsp unrefined sugar
100 ml water

Orange Chia Yogurt
500 g yoghurt of your choice
Juice of 2 oranges
Zest of 1 orange
1 tbsp raw honey
4 tbsp chia seeds
(optional) a pinch of vanilla

Date crumble
2 tbsp sesame seeds
2 tbsp pumpkin seeds
2 tbsp macadamia nuts
2 tbsp pistachios
2 tbsp pecan nuts
8 soft dates, pitted and cut open
1 tbsp olive oil Fleur de sel


300 g rhubarb, cut into pieces 300 g
raspberries (fresh or frozen)
3 tbsp unrefined sugar
100 ml water


500 g yoghurt of your choice

2 tbsp sesame seeds
2 tbsp pumpkin seeds
2 tbsp macadamia nuts
2 tbsp pistachios
2 tbsp pecan nuts
8 soft dates, pitted and cut open
1 tbsp olive oil Fleur de sel

Preparation method

How do you make this?

Rhubarb-raspberry compote
Place the rhubarb, raspberries, sugar and water in a saucepan with a lid.
Simmer gently for 5 minutes with the lid on.
Then remove the lid and let it cook for another 5 minutes so that the liquid reduces somewhat.
Let cool completely.

Orange Chia YogurtMix the yoghurt with the orange juice, zest, honey, chia seeds and possibly vanilla. Let it rest for at least 5 minutes so that the chia seeds can swell and the mixture becomes nice and creamy.

Date crumbleToast the sesame seeds, kernels and nuts in a dry pan until they are lightly coloured and fragrant. Add the olive oil. Place the cut dates with the cut side down on the edge of the pan and let them caramelise gently. Mix everything well and fry, stirring, for 2 minutes. Finish with a pinch of fleur de sel.

Finishing & servingChoose a glass for a festive touch or a beautiful plate for a cozy start to your day. Start with a layer of orange-chia-yogurt, spoon the fresh rhubarb-raspberry compote on top and finish with a generous scoop of the date crumble. If desired, finish with a few leaves of fresh mint - and done!

Tips

You can easily vary with seasonal fruit or keep the crumble a bit crunchy by not baking it too long. And hey – this is also delicious as a dessert!
