Preparation of the dough
- Put the whole wheat flour and oats in a large bowl. Add the salt, nuts, seeds, and mix well.
- Dissolve the yeast in the lukewarm water, add the honey, and let it sit for 5 minutes until foam forms.
- Pour the yeast mixture along with the olive oil into the dry ingredients and mix until a firm dough forms.
First rise
Cover the bowl with a damp cloth and let it rise for 1 hour in a warm place until the dough has doubled in volume.
Shaping and second rise
- Dust the work surface with some flour, knead the dough briefly, and shape it into a loaf.
- Let it rise for another 30-45 minutes under a cloth.
Baking
Lightly dust the air fryer basket with flour, place the bread in it, and set to fry & steam – 165°C for 40 minutes. Press the synchronize button if you are preparing the fig and brie dip at the same time.
Cooling and serving Let the bread cool completely on a rack for the best results.
