Ingredients

What do you need?

Quantity: 1 loaf

400 g whole wheat flour
125 g oatmeal
7 g dry yeast
15 g olive oil
450 ml warm water
12 g fine salt
2 tbsp honey
2 handfuls of walnuts (coarsely chopped)
1 handful of raisins
1 handful of mixed nuts (e.g. almonds, hazelnuts)
1 handful of pumpkin seeds
1 handful of sunflower seeds
2 tbsp ground linseed

Preparation method

How do you make this?

Preparation of the dough 

  • Put the whole wheat flour and oats in a large bowl. Add the salt, nuts, seeds, and mix well.
  • Dissolve the yeast in the lukewarm water, add the honey, and let it sit for 5 minutes until foam forms.
  • Pour the yeast mixture along with the olive oil into the dry ingredients and mix until a firm dough forms.

First rise
Cover the bowl with a damp cloth and let it rise for 1 hour in a warm place until the dough has doubled in volume.

Shaping and second rise 

  • Dust the work surface with some flour, knead the dough briefly, and shape it into a loaf.
  • Let it rise for another 30-45 minutes under a cloth.

Baking 

Lightly dust the air fryer basket with flour, place the bread in it, and set to fry & steam – 165°C for 40 minutes. Press the synchronize button if you are preparing the fig and brie dip at the same time.

Cooling and serving Let the bread cool completely on a rack for the best results.
