Muddle lime and mint
Cut the lime in half. Place the lime halves with the mint leaves and sugar (or simple syrup) in a shaker or sturdy glass. Use a muddler (or the back of a wooden spoon) to gently press the lime so the juice is released and the mint gives off its aroma.
Shake the cocktail
Fill your shaker with about 6 ice cubes. Add the white rum and coconut cream. Close the shaker and shake vigorously until well combined and chilled.
Serve
Fill a tall glass with extra ice cubes. Pour the shaker mixture over the ice. Top up with sparkling water until the glass is full and stir gently.
Garnish
Finish with a sprig of mint and a spoonful of pomegranate seeds on top. Serve immediately so the bubbles stay fresh and the flavors shine.
Tips
- Use creamy coconut cream (not coconut milk) for the proper texture and flavor.
- Shaking with plenty of ice ensures the drink is nicely chilled without being watered down.
- Adjust the sweetness by using more or less cane sugar to your taste.
- Add pomegranate seeds just before serving so they retain their crunch and color.
- Use freshly squeezed lime juice for the best fresh and bright lime flavor.
