1 lime
10 mint leaves + extra sprig for garnish
1 tsp brown sugar or simple syrup
6 cl white rum
10 cl coconut cream
20 cl sparkling water

Preparation method

How do you make this?

Muddle lime and mint
Cut the lime in half. Place the lime halves with the mint leaves and sugar (or simple syrup) in a shaker or sturdy glass. Use a muddler (or the back of a wooden spoon) to gently press the lime so the juice is released and the mint gives off its aroma.

Shake the cocktail
Fill your shaker with about 6 ice cubes. Add the white rum and coconut cream. Close the shaker and shake vigorously until well combined and chilled.

Serve
Fill a tall glass with extra ice cubes. Pour the shaker mixture over the ice. Top up with sparkling water until the glass is full and stir gently.

Garnish
Finish with a sprig of mint and a spoonful of pomegranate seeds on top. Serve immediately so the bubbles stay fresh and the flavors shine.

Tips

  • Use creamy coconut cream (not coconut milk) for the proper texture and flavor.
  • Shaking with plenty of ice ensures the drink is nicely chilled without being watered down.
  • Adjust the sweetness by using more or less cane sugar to your taste.
  • Add pomegranate seeds just before serving so they retain their crunch and color.
  • Use freshly squeezed lime juice for the best fresh and bright lime flavor.
