Make the watermelon juice
Peel the watermelon, cut it into pieces, and remove the seeds. Blend the pieces with a hand blender or regular blender until smooth. Optionally, strain the juice for an extra fine texture.
Finish the juice
Add the lime juice and a few ice cubes to the watermelon juice and blend again until well chilled.
Prepare the glasses
Sprinkle some coconut blossom sugar on a plate. Rub the rim of a glass with a little agave syrup, then dip the rim into the sugar so it’s nicely coated.
Serve
Fill the glass with the watermelon juice. Serve immediately, optionally with an extra ice cube or a sprig of mint for a refreshing touch.
Tips
- Use a fully ripe, sweet watermelon for the best flavor.
- Strain the juice if you want an extra smooth cocktail without pulp.
