Pita Breads
8 pita breads

Harissa Chickpeas
2 tbsp olive oil
500 g canned chickpeas, rinsed
1 to 2 tbsp harissa (to taste)
2 shallots, finely chopped
2 tsp garlic powder
1 tsp smoked paprika
Juice of 1 lemon
Pinch of salt

Cucumber Salad
2 cucumbers
1 bunch of parsley, finely chopped
2 tbsp vinegar
4 tbsp sesame oil

Hummus Dressing
250 g hummus
Juice of 1 lemon
1 tbsp grain mustard
1 tsp cumin powder
2 tbsp tahini
50 ml water

1 tsp cumin powder
2 tbsp tahini
50 ml water

Preparation method

How do you make this?

Prepare the Harissa Chickpeas: Heat the olive oil in a pan and add the chopped shallots. Let them become translucent. Then add the harissa, garlic powder, and smoked paprika, and sautΓ© briefly until the spices are fragrant. Add the chickpeas and heat them well. Deglaze with the lemon juice and season with a pinch of salt.

Make the Cucumber Salad: Slice the cucumbers into super thin slices using a mandoline or grater. Mix the cucumbers with the finely chopped parsley, vinegar, and sesame oil.

Prepare the Hummus Dressing: Put the hummus, lemon juice, grain mustard, cumin powder, tahini, and water in a blender. Blend everything until creamy dressing.

Warm the Pita Breads: Toast the pita breads in a toaster or warm them in the oven.

Assemble: Layer the pitas with the harissa chickpeas, cucumber salad, and hummus dressing. Add extra harissa if you like a bit more heat.

Tips

  • Variation: Add some fresh tomatoes or grilled peppers for extra vegetables.
  • Tahini Alternative: No tahini at home? You can replace it with a spoonful of peanut butter for a different twist.
