APPLE-MINT-CUCUMBER PITCHER
500 ml unsweetened apple juice, chilled
1 liter sparkling water, chilled
1 bunch of mint
0.5 cucumber sliced
1 red apple sliced

DAFT PUNCH
500 ml unsweetened quality pineapple juice
juice of 5 limes + 1 extra for garnish
300-400 ml mezcal to taste
2 fresh pineapple slices
each with 5 cloves in them
6 passion fruits
800 ml chilled tonic
0.5 bunch of thyme

HOT SUGAR FOR THE RIM OF THE GLASS
4 tablespoons sugar
1 teaspoon chili powder

THAI NUTS
1 tablespoon red curry paste (green or yellow can also be used)
2 lemongrass stalks, finely sliced
6 kaffir lime leaves, roughly crushed
zest of 2 limes
1 tablespoon soy sauce
1 teaspoon powdered sugar
1 tablespoon egg white
2 tablespoons sesame seeds
150 g cashews
200 g pecans
150 g unsalted peanuts

Preparation method

How do you make this?

Apple-mint-cucumber pitcher: Put everything in a large pitcher. Press down a bit with a spatula, stir briefly and place on the table with glasses.

Daft Punch: Pour the pineapple juice, lime juice, and mezcal into a punch bowl and refrigerate for at least 1 hour to chill well.

Just before serving, add the pineapple, four halved passion fruits, and slices of one lime to the chilled punch bowl. Finish with the chilled tonic and thyme and place a ladle in it.

Rim the glasses with the peels of the limes you have juiced. Mix sugar and chili powder on a small plate and dip the top edges of the glass in it.

Put a piece of passion fruit in the glasses and scoop the punch in.

Thai nuts: Preheat the oven to 150 ยฐC.

Mix the curry paste in a bowl with the other ingredients, except for the nuts, until a smooth paste.

Then mix the paste well with the nuts.

Spread on a baking sheet lined with parchment paper and roast for 12 minutes in the oven at 150 ยฐC.

Mix everything well again halfway through.

Let cool and serve in a bowl.
