400 g fresh salmon fillet, boneless and skinless
1 tbsp capers
0.5 yellow onion
0.5 bunch flat-leaf parsley
1 yolk
1 tsp mustard
100 ml grape seed oil
1 large sweet-sour pickle
1 tsp tabasco
1 tbsp Worcestershire sauce
Black pepper from the mill
Fleur de sel

Slices of bread to toast

400 g fresh salmon fillet, boneless and skinless
1 tbsp capers
0.5 yellow onion
0.5 bunch flat-leaf parsley
1 yolk
1 tsp mustard
100 ml grape seed oil
1 large sweet-sour pickle
1 tsp tabasco
1 tbsp Worcestershire sauce
Black pepper from the mill
Fleur de sel

Preparation method

How do you make this?

Cut the salmon into slices, then into strips, and then into fine cubes, and place back in the refrigerator.

Finely chop the onion, parsley, capers, and pickle.

Put the yolk and mustard in a large flat dish, season with pepper and salt, and gradually whisk in the oil to obtain a nice smooth base mayonnaise.

Stir in all the other ingredients, adding the chilled salmon last, taste, and adjust seasoning if necessary.

Serve with toasted slices of bread.
