Pick the lettuce leaves, wash and spin them. Do this very carefully so that the leaves remain whole and beautiful.
Boil the eggs for 10 minutes and place them in a large bowl of ice-cold water for 10 minutes.
Place the cherry tomatoes in a bowl, pour boiling water over them and let them sit for 2 minutes.
Rinse them with cold water and peel them, set them aside.
Divide the lettuce among nice bowls or glasses, then add the tomatoes and then the shrimp on top.
Finish off with a generous spoonful of cocktail sauce.
Push the yolk and egg white separately through a sieve to get a fine texture, or mash them with a fork, mix the mashed yolk and egg white together and divide over the bowls.
Serve with extra cocktail sauce at the table and lemon wedges.
