Ingredients

What do you need?
Quantity:

Different types of hard vegetables such as:
Red beet
Broccoli
Cauliflower
Sugar snaps
Turnip
Celery
Fennel
Winter carrots
Jerusalem artichoke

For the dip:
180 g cashews, soaked in warm water for 1 hour
5 tbsp tahini
Two handfuls of fresh herbs to taste: mint, coriander, parsley, basil, dill, tarragon
Juice of 1 lime
1 clove of garlic
Pepper and salt
Water to thin

Preparation method

How do you make this?

Scrub the vegetables well, keep the skin on.

Cut all vegetables into bite-sized pieces.

Place in the steamer basket and steam for 4 min at 100°, ensuring the vegetables are al dente.

Let cool.

Put everything for the dressing in a food processor.

Process until smooth.

Season well with pepper and salt.

Serve with the vegetables.
