Sausage rolls are always very popular on a party table or just among friends during an appetizer. This time we make them extra festive by finishing them with caviar and even edible gold glitter. Erik is not such a fan of too much fuss around food, this combo just worked haha, just kidding, he loved it! Ingredients

What do you need?
Quantity: 6P

Filling
Menapi sausages (4 pieces)
1 small, finely chopped onion
Salt & pepper from the mill
1 egg
3 tablespoons breadcrumbs
50 g Pecorino (with or without truffle
or Parmesan cheese + a little tartufata/truffle oil for extra aroma)

Puff pastry
1 sheet of puff pastry
1 yolk and splash of water, for brushing

Topping (after baking)
1 box of Caviar
Edible gold glitter (optional) to complete the festive touch

Make it veggie!

Replace with a good vegetarian sausage or plant-based sausage alternative. You can also swap the cheese for a vegan cheese.

Preparation method

How do you make this?

Preheat the oven to 180°C (top and bottom heat).

Remove the sausages from their skins. Place the meat in a large bowl. Add the finely chopped onion, salt & pepper, egg, breadcrumbs and grated cheese. Mix everything thoroughly until it forms a homogeneous filling.

Unroll the puff pastry. Place the sausage filling in an elongated strip at the end of the puff pastry and shape it into a “long sausage” with your hands.

Carefully roll the puff pastry around the filling, making sure the seam is at the bottom. Place it on a baking tray lined with baking paper.

Brush the top with the egg mixture (egg + dash of water). For extra taste and looks you can sprinkle some grated cheese or sesame seeds on top.

Bake in the preheated oven for 25 minutes, until the puff pastry is golden brown and crispy.

Let the sausage bread cool slightly so that you can cut it, with a bread knife, into bite-sized pieces.

Just before serving: place a small spoonful of caviar on each piece and – if you like – sprinkle some edible gold glitter on top for that festive effect.

Tips

  • For extra bite, you can add some finely chopped fresh herbs (such as parsley or chives) to the filling. 
  • Serve the sausage bread at room temperature so that the flavors of the caviar and cheese can fully develop. 
  • If you want to prepare the pieces in advance, bake, let cool completely, cut into bite-sized pieces and store in the refrigerator. Just before serving, reheat in an oven at 160°C for ±5 minutes (or reheat briefly in a hot air oven) and then finish with caviar & glitter.
