8 slices of sourdough bread
3 thick carrots
1 red apple
Pepper and salt
1 tbsp apple cider vinegar
1 tbsp canola oil
8 slices of sweet and sour pickles
250 g fricandon (2 packages)
300 g soft goat cheese

Preparation method

How do you make this?

Wash the apple and peel the carrot.

Grate the carrots and apple in a large bowl.

Season with pepper and salt and add oil and apple cider vinegar. The vinegar and salt will draw out the moisture from the apples and carrots.

Pour the mixture into a sieve and press a little to remove the excess moisture.

Spread the goat cheese over the 8 slices.

Generously top 4 slices with fricandon, carrot salad, and pickles.

Place the top slice on, press down, cut in half, pack it up, and put it in your lunchbox.
