4 small mixed salads (or salad of choice)
3 anchovy fillets in oil
100 g Parmesan in block
1 spring onion
1 tbsp strong mustard
250 ml corn oil
1 tbsp vinegar
Black pepper from the mill
1 tsp honey

Preparation method

How do you make this?

Chop the spring onion finely and place it in a tall measuring cup. Add half of the cheese and the rest of the ingredients (except for the salad). Insert the hand blender and blend finely, adding some water if it is too thick. Taste and season if necessary.

Slice the lettuce and arrange it on a plate. Drizzle vinaigrette over it and grate the rest of the Parmesan on top. Finish with some more black pepper.
