Cut the sweet and sour pickle into very small cubes.
Finely chop the onion and finely grate the garlic.
Put the mayonnaise in a bowl and mix in the pickle, onion, garlic, and tarragon.
Add the chipotle-lime seasoning and stir everything together well.
Optionally add the capers if you want a more tartar sauce-like touch.
Season to taste with pepper and a little salt. If you want the sauce fresher and more acidic, add a small splash of lime juice or some pickle juice.
Ideally, let the sauce rest in the refrigerator for 10 to 15 minutes so that the flavors can blend nicely.
Serve immediately or keep refrigerated until use.
Tips
- Use a good basic mayonnaise, as it largely determines the taste of the sauce.
- Finely chop the gherkin and onion to get the best texture. If you want a milder onion flavor, replace the onion with shallot.
- For extra crunch, I like to add some extra pickles or capers.
- This sauce is great with tacos, burgers, grilled chicken, fish, pulled pork, steak, fries, or potato wedges.
- Stir the sauce briefly before serving if it has been in the refrigerator for a while.
- Storage tips
This sauce will keep for 3 to 4 days in the refrigerator in a sealed jar or container.
I prefer not to store this sauce in the freezer. Mayonnaise-based sauces can curdle after thawing and lose their lovely creamy texture.
