What do you need?

2 slices of whole grain bread
2 eggs
Olive oil
1 ripe avocado
1 tsp Chili flakes
Extra basil for on top

Pesto:
300 g basil leaves
150 g fresh grated Parmesan
80 g roasted pine nuts
Juice of 1 lemon
1 clove of garlic
Pepper and salt
6 tbsp olive oil
100 ml water

Preparation method

How do you make this?

Mix all the ingredients for the pesto together, it can still be a bit coarse

Put 1 tbsp of pesto per person in a pan, stir a bit and crack an egg over it, cooking it sunny side up.

Toast your bread and top with thin slices of avocado, add the pesto egg on top with all the pesto from the pan. 😊

Finish with basil, olive oil, and chili flakes.

Tips

You never have pesto too much! Use the Pesto surplus in a pasta !!
