Separate the eggs.
Beat the yolks and mix in the buttermilk.
Mix flour, baking powder, sugar, and vanilla seeds together.
Add half of the buttermilk mixture to the flour and whisk until there are no lumps, then add the rest of the buttermilk.
If you still have lumps, sieve or mix the batter.
Whip the egg whites stiff with the salt and gently fold into the batter.
Heat a large frying pan, grease it with some oil, and pour batter into the pan to make pancakes about 10 cm in diameter, let them cook until bubbles form on the top, flip them over and let them cook further, continue this with all the batter.
To serve, stack 3 to 4 pancakes on each plate, pour the maple syrup over them, and sprinkle some blueberries and sliced strawberries on top.
Optionally, sprinkle some powdered sugar on top.
