Ingredients

What do you need?

4 large tomatoes
3 tbsp olive oil
1 large onion
4 cloves garlic
1 tbsp Herbes de Provence
1 tsp dried rosemary
2 bell peppers
1 zucchini
1 eggplant
140 g tomato paste
2 tbsp balsamic glaze
400 g diced tomatoes

Preparation method

How do you make this?

Sauté chopped onion and garlic in oil. Cut all vegetables into small cubes of 1 cm. Remove the seeds from the bell peppers.

Add the tomato paste and let it cook for a bit, then add the dried herbs, pepper, and salt along with all the other ingredients and let it stew for 20 minutes with the lid on, taste again and season if necessary, and it's ready.

You can freeze it or simply prepare it with pasta.
