Ingredients

250 g chestnut mushrooms
150 g smoked bacon strips
250 ml red wine
350 ml beef broth
150 g small fresh pearl onions
1 tbsp tomato paste
1 tbsp flour
A sprig of thyme
A generous knob of butter
Pepper and salt
1 shallot

Preparation method

How do you make this?

Peel the pearl onions and cut the mushrooms into quarters. SautΓ© the bacon without any fat in a pan until nicely colored. Add the quartered mushrooms and fry for 4 to 5 minutes. Set aside.

In the same pan, sautΓ© the finely chopped shallot together with the bacon. Add the flour all at once and stir well until no flour is visible. Off the heat, add the wine and tomato paste and stir everything well together.

Add the broth and the rest of the ingredients and put it back on the heat, bring to a boil and then let it simmer for 8 to 10 minutes until the onions are soft, taste and season if necessary. If your sauce is too thick, add extra broth.
